Tip of the Week: Safe eating when the power’s out
If the power goes out because of storm, meal planning can be a challenge. Here are some tips:
- If the power is off, it is best to not open the freezer door. Each time the door is opened you lose cold air and substantially increase the amount of frozen food that will be lost.
- If your area is without water, save the liquids from canned vegetables and fruits. Substitute these for water in cooked dishes.
- Cooked vegetables, meats and meat dishes can be safely kept at room temperature for two hours.
- Foods that provide nutritive value yet require no cooking and refrigeration include canned tuna, canned fruits or veggies, raw fruits and vegetables, dried fruits, nuts, ready-to-eat cereal, powdered milk, crackers, peanut butter, prepared puddings and gelatins.

Easy recipe: Sunrise Casserole
Breakfast always is a quick meal with – hopefully – not much prep time. This casserole is quick to prepare and is best made the night before and refrigerated.
Ingredients:
1 can crescent rolls
1 pound sausage, cooked and drained
1/2 cup mushrooms, sliced
1 medium onion, diced
1/2 red or green pepper, diced
12 ounces (about 1 1/2 cups) Monterey Jack cheese, grated
6 eggs
1 can condensed cream of mushroom soup
1/4 cup milk
Directions:
Unroll the rolls but do not pull apart. Line a greased, 13-by-9-inch baking dish with dough, sealing perforations. Brown peppers, onion and mushrooms with sausage. Spread on dough and top with half the cheese.
Whisk eggs with soup and milk and pour over sausage. Sprinkle remaining cheese on top. Chill overnight.
Bake at 350 degrees for one hour. Serves 8.
